Job Summary:
Responsible for the organization and execution of culinary administrative duties whilst managing and overseeing culinary teams. Work with the Executive Chef in all other aspects of operations during shoulder seasons.
Essential Job Functions:
- Scheduling culinary teams
- Forecasting staff levels proportional to business levels
- Completion of payroll for culinary teams
- Generating gratuity reports for culinary team members
- Daily metric reporting (labour costs, revenue, food costs etc.)
- Management of job vacancies for culinary roles
- Interviewing and hiring culinary staff
- Onboarding and training of all new, returning and existing staff
- Costing of all recipes through internal systems
- Management of food costs, reacting to price changes and working with procurement teams
- Oversee culinary costs within the parameter of the profit plan; maintaining labour & food costs within monthly targets.
- Provide the full range of supervisory duties including coaching, orientation training, probationary reports, performance evaluations, etc.
- Requisitioning all applicable product through F&B Purchasing Manager.
- Ensuring appropriate levels of inventory and its utilization.
- Ensuring prescribe level of hygiene, order and cleanliness in kitchen and related areas as per Provincial standards, food safe and Grouse Mountain guide lines
- Ensuring all staff meet Food Safety certification standards and follow practices as per Provincial standards
- Monitoring kitchen equipment performance and reporting repair needs to Executive Chef
- Maintaining and inspiring professional conduct and etiquette.
- Other duties as required
Supervisory Responsibility
- This position will oversee a group a line cooks and dishwashers in the absence of the Executive Chef
Required Qualifications and Abilities
- Experience in culinary environments preferred
- Completion of secondary school required
- Level 01 Food Safe certificate required; Level 02 Food Safe certificate preferred
- Ability to motivate, retain and develop staff
- Exceptionally organized and able to multitask/coordinate multiple function activity
- Excellent communication and writing skills
- Proficient in Microsoft Excel and Word
- Experience with Optimum Control preferred
- Experience with Ceridian Dayforce preferred
- Excellent customer service and interpersonal skills
- Flexible work hours; including evening closing shifts, weekends and holidays
Compensation and Benefits
- $52,000 - $65,000 per year plus gratuities
