The Granite Club is hiring a Pastry Demi Chef de Partie who is responsible for running any pastry food production for all outlets independently. An individual in this position will be able to handle all Pastry cooking positions within the Club. An individual in this position is responsible for overseeing Apprentice Cooks and Cooks and ensures standards and safety is thoroughly communicated. An individual in this role demonstrates ownership and accountability for all functions in their environment.

Primary Responsibilities

Technical / Culinary:

  • Ensure all stocks are being kept securely and under the correct conditions
  • Ensure that all mise-en-place is always freshly prepared and on time for service
  • Ensure that all dishes reach the hot plate or pass correctly garnished and seasoned, correct portion, size, and served on the appropriate service plate
  • Ensure all food preparations are being prepared to the correct specifications, quantity & quality, food handling safety requirements and are correctly seasoned
  • Maintain station organization and cleanliness
  • Review all fridges at the end of day. Proper sanitation, labeling, thermometers are to standard
  • Able to produce for all outlets including, but not limited to: Elements, Hearth, 1875, Intersections, Events, Commissary, Production and Rainbow Cafe
  • When working behind a buffet, food ingredient knowledge and food preparation must be known when dealing with Members
  • Deputize in Pastry Chef and Sous Chef ’s absence and to take charge of the kitchen when directed to do so.
  • Responsible for preparing evening mise-en-place lists.

 

Leadership / Communication:

  • Ensure that any anticipated food and supply shortages are communicated promptly to the Sous Chef or Executive Chef
  • Must maintain food & beverage specifications and standard operating procedures.
  • Responsible for completing handovers at the beginning and ending of each shift
  • Participate in departmental meetings, briefings and tutorials
  • Be able to train all employees effectively through the various stations and outlets
  • Leads by example and demonstrates teamwork and ownership
  • Take the lead role in all kitchen outlets
  • Knowledgeable and supportive of the Club Guiding Principles, Core Values, Vision and Mission Statements
  • Knowledgeable and supportive of the Kitchen Guiding Principles
  • Encouraged to communicate and contribute new dishes and menu ideas
  • Works with Sous Chefs and Executive Chef to identify opportunities to better train, develop and standardize.

 

Required Qualifications

  • A minimum 3 years of experience as a Cook at the Granite Club is required
  • Culinary diploma/degree is required
  • Working towards the Canadian Red Seal (Cook) Certification is an asset
  • Food Handler Certification required
  • Successful completion of Demi Chef de Partie written and practical tests
  • Must be able to read, write and speak English fluently
  • Ability to manage under pressure in a fast paced environment
  • Ability to lift, push and pull up to 50 lbs and stand for a full shift
  • Must be available for all shifts including nights, weekends and holidays
